How to Temper Chocolate at Home (Three Methods That Actually Work)
Why Tempering Matters (and What Goes Wrong Without It)
Chocolate is made up of different types of fat crystals. The one you want is called a Beta-5 crystal. When chocolate cools slowly and at the right temperature, those crystals form in a tight, organized structure. That's what gives tempered chocolate its gloss, its snap, and the way it melts smoothly on your tongue instead of feeling greasy or waxy.
When chocolate cools too fast, too slow, or at the wrong temperature, you get a mix of unstable crystal forms. The cocoa butter separates and rises to the surface. That's the grey or streaky coating you've seen called "bloom." Fat bloom looks powdery. Sugar bloom looks more mottled, and usually happens from condensation.
Neither one is harmful to eat, but neither looks good on chocolate-dipped strawberries you're making at 11 PM the night before a birthday party, or on molded bonbons you want to gift. Tempered chocolate: glossy surface, firm snap, stays solid in your hand for a few seconds. Untempered: dull, soft, melts immediately, sometimes chalky.
Real Chocolate vs. Coating Chocolate: Know What You're Working With
Before you do anything else, check your label. The type of chocolate you have determines whether tempering is even necessary.
Coating chocolate (sold as Merckens wafers, Wilton Candy Melts, almond bark) replaces cocoa butter with vegetable oil. It's designed to melt and set without any tempering. This is what most home bakers use for cake pops, dipped pretzels, and molded candies. It works well, it's forgiving, and there is nothing wrong with using it. Just melt it and go.
Real chocolate (couverture like Callebaut, Valrhona, or Guittard) contains cocoa butter. It produces better flavor and that professional gloss, but it requires tempering. The rule is simple: if the label lists "cocoa butter" as an ingredient, you need to temper it before using it in molds or for dipping.

Tempered Chocolate Temperature Reference
These are the three temperatures you're working through: the melt temperature (hot enough to fully melt all crystal forms), the cooling temperature (where stable Beta-5 crystals form), and the working temperature (what you pour or dip at).

White chocolate is the most delicate of the three. It scorches faster and has a narrower working window. If you're new to tempering, start with dark chocolate. It's the most forgiving and has the widest temperature range to work with.
Seeding: The Easiest Method for Home Bakers
This is the method we recommend to anyone starting out. No marble slab, no special equipment. You just need a bowl, a spatula, and a thermometer. The idea is simple: you melt most of your chocolate to destroy all existing crystals, then stir in finely chopped solid chocolate. The solid pieces act as "seeds" of stable Beta-5 crystals, which spread through the melted chocolate as it cools.
What you need: A heat-safe bowl, a spatula or wooden spoon, a double boiler or microwave, an instant-read thermometer, and your chocolate. Chop the chocolate finely before you start. Larger chunks won't melt evenly into the warm chocolate.
- Melt 2/3 of your total chocolate using a double boiler or microwave (see Method 3 for microwave-specific instructions). Bring it to the melt temperature for your chocolate type. Dark: 50-55°C. Milk: 45-50°C. White: 40-45°C. Don't rush this with high heat.
- Remove from heat. Take the bowl off the double boiler or away from the microwave. Let it sit for 30 seconds off the heat source.
- Add the remaining 1/3 finely chopped chocolate. Add it gradually, not all at once. Stir continuously with your spatula. The heat from the melted chocolate will melt the new pieces, and those pieces will seed the mixture with stable crystals as the temperature drops.
- Keep stirring. This isn't a passive step. You want constant agitation. Check the temperature every 30-45 seconds. You're aiming for the "cool to" temperature (27-28°C for dark), then warming back to working temperature (31-32°C for dark). The brief return to working temperature happens naturally from the residual heat of the bowl.
- Test before you pour. Dab a small amount onto a piece of parchment paper. Set it aside. At working temperature (65-70°F room), properly tempered chocolate should feel cool to the touch in 30 seconds and be fully set and glossy within 2-3 minutes. If it's streaky or stays tacky, keep stirring and let it cool a degree or two more.
Tabling on a Marble Slab
Tabling is what you see chocolatiers do: pouring chocolate on a cool surface and working it back and forth with a bench scraper until the temperature drops. It looks impressive, but it's not complicated once you've done it a couple of times. The marble acts as a heat sink, pulling temperature out of the chocolate quickly and evenly as you work it.
You need a clean marble slab (or a large granite countertop that you've scrubbed clean and dried completely), a bench scraper, a bowl scraper or offset spatula, and a thermometer. The surface must be dry. One drop of water on that marble and the whole batch can seize.
- Melt all your chocolate to the melt temperature for your type (see the table above). Remove from heat.
- Pour about 2/3 of the melted chocolate onto the marble slab. Keep the remaining 1/3 in the bowl, covered to retain warmth.
- Work the chocolate on the marble. Use the bench scraper to push and fold the chocolate back on itself continuously. You're not spreading it thin like a crepe, you're working it back and forth in a thick mass. This is what seeds the crystals and drops the temperature.
- Check the temperature frequently. For dark chocolate, you're bringing it down to 27-28°C. For milk chocolate, 26-27°C. For white chocolate, 25-26°C. This typically takes 3-5 minutes depending on the size of your batch and how cool your marble is.
- Return the tabled chocolate to the bowl with the remaining 1/3 warm chocolate. Stir thoroughly. The temperature should come up to working range (31-32°C for dark chocolate). If it's still below working temperature, hold the bowl briefly over warm water and stir.
- Test on parchment as described in Method 1. Set and glossy in 2-3 minutes means you're ready to pour.
Microwave Seeding: The Fast Shortcut
This is seeding (Method 1) done entirely in the microwave, which most people find faster and easier to manage. The critical difference from Method 1 is how you apply the heat. Microwave ovens heat unevenly and can scorch chocolate before it looks melted, because the exterior stays cool while the interior gets too hot. The fix is simple: low power, short bursts, and stop early.
- Place 2/3 of your total chocolate in a microwave-safe bowl. Set your microwave to 50% power. This is not optional. Full power scorches chocolate.
- Microwave in 30-second bursts. After each burst, stir thoroughly. The chocolate will look unmelted longer than you expect. That's fine. You're heating from the inside out.
- Stop when about 3/4 of the chocolate is melted. At this point, the residual heat in the bowl and the melted chocolate will finish the job if you just keep stirring. Check the temperature. You want to hit your target melt temperature without going over. For dark chocolate: no higher than 55°C.
- Add your remaining 1/3 finely chopped chocolate and stir continuously until melted and the temperature drops to the cool-down target. Same process as Method 1 from this point on.
What Went Wrong: Troubleshooting Common Problems
What to Make With Tempered Chocolate
Once you have properly tempered chocolate in the bowl, the clock is ticking. You have a working window of around 10-15 minutes before it starts to thicken up. Here's what to do with it:
- Chocolate-covered strawberries: The classic. Dip, shake off the excess, set on parchment. Tempered chocolate sets in a few minutes and stays solid at room temperature.
- Molded bonbons and truffles: Pour into polycarbonate molds, tap out air bubbles, let set, and tap to release. Polycarbonate requires tempered chocolate to release cleanly. See our Chocolate Molds Guide for which mold type to choose.
- Dipped cookies and crackers: Pretzels, shortbread, thin mint-style cookies. Tempered chocolate holds its snap and doesn't make the cookie soggy.
- Bark: Pour onto a parchment-lined sheet pan, spread thin, top with nuts or dried fruit. Breaks cleanly when set. Untempered chocolate makes mushy bark that doesn't snap.
- Truffles with an outer shell: Dip ganache-filled centers, set on parchment. The tempered shell gives structure and keeps the truffle solid at room temperature (up to about 68°F).
Frequently Asked Questions
Does coating chocolate need to be tempered?
No. Coating chocolate (Merckens, Wilton Candy Melts, almond bark) is formulated to set without tempering. It substitutes vegetable oil for cocoa butter, which means it has a stable structure right out of the bag. Just melt it at low heat and use it. Real couverture chocolate with cocoa butter on the label is what requires tempering.
What happens if chocolate isn't tempered properly?
You get bloom: a grey, white, or streaky surface caused by unstable cocoa butter crystals rising to the surface. The texture will be soft rather than firm, and the chocolate will melt immediately on contact with warm hands. It's safe to eat but won't look or feel right. For molded bonbons in polycarbonate molds, untempered chocolate often won't release from the mold at all.
Do I need a thermometer to temper chocolate?
Technically no, experienced chocolatiers can temper by touch and appearance. Practically, yes, especially when you're starting out. A thermometer gives you real-time feedback through the three critical temperature points: melt, cool-down, and working temperature. An instant-read digital thermometer works fine. Why did my chocolate seize?
Water contamination is the most common cause. One drop of water or steam hitting melted chocolate is enough to trigger seizing. Make sure all equipment is completely dry. Overheating is the second cause: dark chocolate scorches above 55°C, milk and white chocolate above 45-50°C. Check your temperatures during every burst in the microwave, and use a double boiler set over simmering (not boiling) water.
